I like to think of Labour Day weekend as the true last hurrah of summer before we fall into the best season EVER – FALL! With the kiddo’s heading back to fall, vacations wrapping up, and everyone basically getting back into the swing of things, you may be looking for a new recipe or two to shake up your meal prep. Well, have I got a recipe for you! This is the perfect treat to bake up on Sunday and then keep in the fridge for your hectic mornings, boxing up for lunch al-desko, an after school (or work) snack, or late night treat. My Mom is doing the Sugar Free September challenge so these carrot cream cheese squares have ZERO white sugar. In fact, the sweetness comes from lots and lots of carrots plus a dash of maple syrup and I even snuck in some granola for extra goodness.

Here’s what I believe: Cream cheese frosting is non-negotiable, nuts add great texture and flavour, and raisins don’t belong anywhere within a 2-mile radius of my carrot cake. The cold hard truth? I make the best carrot cake in the entire world. Universe. Galaxy. Get on the Jessica train, because I am about to blow your mind.
Toronto’s weather has been all over the map lately. We just can’t seem to settle down and get good and hot days in a row! The weather teases us with one or two days of sunshine and then turns cloudy, cold, and miserable the next. Last week we got a couple of true summer days, and as true Torontonians, Jessica and I made the most of it by wearing sun dresses and claiming a couple of seats on a patio for a working lunch. Then we rounded up the crew for even more patio time at the Porch for after work drinks. Patio life!
Weekday dinner planning can be tough. Most days I spend my commute home taking a mental inventory of what ever is left in my fridge and trying to find a yummy, healthy, easy, quick, fresh recipe on pinterest for dinner. It’s a tall order. One of my boyfriend’s favourite meals is Asian Beef Lettuce Wraps inspired by the awesome Gordon Ramsay. This was one of the first recipes we cooked together! Since then, we’ve adjusted and customized the recipe to make it perfect for us. Now I want to share it with you guys!
